Recipe: Grilled figs with jamón serrano and manchego

Makes 8
4 ripe, but firm figs, halved
100g manchego* cheese, sliced
8 slices (about 100g) thinly sliced jamón serrano**
3 tsp extra virgin olive oil
2 tsp sherry vinegar
- Heat grill to medium-high. Trim base of figs, if necessary, so they sit flat. Place 1 or 2 pieces of cheese on each fig half then wrap in jamón. Place figs on an oven tray, drizzle with oil and season with pepper.
- Grill figs for 2-3 minutes or until cheese melts and jamón starts to crisp. Place on a serving plate, drizzle with vinegar and serve immediately.
*Manchego is one of Spain‘s famous cheeses. A semi-firm ewe‘s milk cheese with a golden colour, it is available from delicatessens. Substitute with pecorino.
**Jamón serrano is a Spanish cured ham similar to prosciutto, although not as salty. It is available from good delicatessens.
